Some true stories about this salad…

I have literally had this in the fridge, think about it all day, come home, and eat it straight from the serving bowl.

Hubby and I often have disagreements over who gets the last bowl (really this is the only salad we have this problem with).

So a few years ago when kale was all the rage, I was on the hunt for the perfect kale salad recipe.  All the recipes I tried, the kale was still so tough and they just never came out right until this one.  

This one was just…. Perfection!  

And the best part (okay the best part is how yummy it is), but the next best part is it really needs to hang out in the fridge overnight so  it’s perfect when you can make something ahead of time. I always make it the night before, or even in the morning then have it for dinner that night.

I love a make-ahead dinner (see my post on meal planning) and this one is perfect!

I’ve made it for brunches, dinner parties, kiddos birthday parties, summer BBQ’s, or for an easy dinner.   Just throw some chicken, steak, pork, or shrimp on the side and you have a perfect, easy dinner. YUM!!!

Kale Salad with Honey Lemon Vinaigrette
This salad is perfect as a make-ahead dish, because it gets better after being in the fridge for a few hours, or even overnight. Feel free to change up the ingredients, based on what you have. I swap out whatever nut I have and have also changed up fruit as well.

Honey Lemon Vinaigrette
Instructions
  1. Put all salad ingredients in largest bowl you have. Mix all dressing ingredients together (I add them all to a mason jar and just shake it up). Top salad with dressing, toss, and let sit at least 4 hours, preferably overnight.
