Every once in a while I get super lucky and my mom drops off some of her super yummy concoctions at my house for my family and I to enjoy. This Garbanzo Bean Salad was one of her most recent recipes and immediately after I was done eating it I called her for the recipe. Though I try my hardest and follow the recipe exactly, mine never seems to be as good as hers. 🙂
We love to have this Garbanzo Bean Salad as a side dish at a BBQ (EVERYONE will ask for the recipe). It is also good as a side with chicken (especially my Whiskey Chicken), pork, shrimp, just about anything. You could also swap out the sun-dried tomatoes for roasted peppers if you prefer.
I would also recommend doubling this recipe, because it is that good. You may find yourself eating it directly out of the serving bowl, at least I have!
This salad will come together super quick. Just mix together salad ingredients in a large serving bowl. Then shake up the dressing ingredients in a mason jar until combined. Add dressing to salad and stir. Refrigerate at least 1/2 hour, but it definitely gets better as it sits longer. I like to make it in the morning, and then have it at dinner.
